Vietnamese water spinach and fresh herb platter make the list of Southeast Asia’s best side dishes

A number of popular Vietnamese dishes have appeared on the list of the 54 best side dishes in Southeast Asia, including stir-fried water spinach with garlic, which ranked in the top three.

 

In first place on the list, compiled by Taste Atlas, is Indonesia’s perkedel, served with yellow rice. This fried dish is made from mashed potatoes, minced meat, ground corn, or minced fish (perkedel ikan). The name of the dish comes from the Dutch word frikadel, reflecting the influence of Dutch cuisine on Indonesian territory.

Another Indonesian side dish, tempeh mendoan, came in second place. Thin slices of tempeh—a fermented soybean product—are dipped in a batter containing ground coriander, sliced scallions, and garlic before being deep-fried. This type of tempeh is fried only briefly, creating a crispy outer layer while keeping the inside soft and juicy.

 

In third place is Vietnam’s famous stir-fried water spinach with garlic. “The water spinach is blanched, then stir-fried with garlic, salt, and sugar, while fish sauce is added near the end of the cooking process. This vegetable dish is served hot and is typically part of a three-course meal, with the first dish being stir-fried, the second boiled or steamed, and the third a soup. Stir-fried water spinach with garlic is also delicious when served with white rice,” Taste Atlas wrote.

Meanwhile, in 14th place is the Vietnamese fresh herb platter, which consists of a variety of fresh vegetables and herbs, most commonly lettuce, aromatic herbs such as basil and coriander, cucumber, and bean sprouts. Next is quẩy (16th place), a crispy fried side dish made from a basic dough of wheat flour, baking powder, salt, water, and sugar, which is left to rest for several hours before cooking. “In Vietnam, quẩy is often enjoyed as a street food and is commonly served with porridge, pho, or rice vermicelli soup,” according to Taste Atlas.

The final Vietnamese dish on the list is mắm tôm chua, which originated in Hue. This local specialty consists of shrimp that are lightly fermented in a red-colored sauce. Although the shrimp have been fermented, they still appear very fresh.
