The Michelin Guide has explained what makes Vietnam’s famous crispy pancake, bánh xèo, so distinctive and why it has become an iconic dish for international visitors. The guide also recommends several places where travelers can enjoy this Vietnamese specialty.
The word “bánh” encompasses a wide variety of dishes throughout Vietnam. Most people immediately think of the world-famous bánh mì, while others may know bánh cuốn, fresh spring rolls, or even bánh chưng, a traditional delicacy enjoyed during the Lunar New Year. Among these specialties, however, bánh xèo is just as remarkable. This beloved crispy pancake is believed to originate from the Tây Sơn period, and its size and style vary across different regions of the country.
The dish originated in central Vietnam, where it first appeared as a thin rice-flour pancake fried over high heat. Its name comes from the sizzling sound produced when the batter touches a hot, oil-coated pan. It is typically filled with shrimp, pork, and bean sprouts before being wrapped in rice paper and dipped into a sauce made with fish sauce, lime or vinegar, sugar, garlic, and chili.
Bánh xèo can be enjoyed all year round, but it is often at its best during the cool autumn and winter months, when the milder weather helps the pancake stay crispy for longer. Bánh xèo is also at its finest when the batter is fried immediately after it is prepared.
Each region has its own distinctive climate, so the flavor and subtle characteristics of the dish also vary accordingly. The seasonal herbs available in different regions further shape the taste of bánh xèo throughout the year.
For many international visitors, bánh xèo is reminiscent of the world-famous crêpe. Many people even refer to it as a “Vietnamese-style crêpe.” Originating in Brittany, France, crêpes are made from flour, eggs, milk, and butter. They are cooked on a flat pan rather than baked in an oven and can be filled with either sweet ingredients, such as fruit and cream, or savory ones, such as meat and cheese.
