A Quang Ngai-style bánh xèo restaurant attracts diners with its traditional method of cooking pancakes over a wood fire, evoking the nostalgic atmosphere of decades past.
The bánh xèo restaurant owned by Le Thi Thom, 45, on Do Xuan Hop Street in Phuoc Long Ward, has been operating since 2018. Every day, the wood-fired stoves are kept burning as the restaurant prepares pancakes for its customers.
In the approximately 50-square-meter space, the cooking area is located right in the middle of the restaurant. Thom continuously pours batter into the pans, adds fillings, and flips the pancakes to keep up with customer orders.
The owner says she chooses to use firewood because it makes it easier to control the heat, allowing the pancakes to cook evenly, become crispy, and absorb less oil.

According to Thom, the secret to making delicious bánh xèo lies in selecting the rice and preparing the batter. She has the ingredients transported from her hometown in Quang Ngai. Khang Dan rice is soaked from the previous afternoon and ground into flour the following morning. The flour is then mixed according to her own recipe before being poured into the cooking pans.

The pancakes are cooked in aluminum pans measuring approximately 10 cm in diameter. According to the owner, the batter must be spread evenly, and the thinner the layer, the crispier the pancake. The filling consists of shrimp, pork, and bean sprouts, spread over one half of the pancake.
After adding the filling, the cook covers the pan with a lid for about one to two minutes, adjusting the heat so that the pancake becomes golden and crispy while the filling is cooked just right.
To minimize the risk of fire, the restaurant prepares only a sufficient amount of firewood, maintains a safe distance between the stoves and flammable materials, and assigns staff to supervise the cooking process at all times.

The finished pancake (pictured) has a thin, crispy crust, slightly curved edges, and a satisfying crunch when eaten. Its surface is dry, with no excess oil or excessive charring. When folded in half, the pancake retains its shape without tearing.
Inside, the shrimp, pork, and bean sprouts are cooked just right, retaining their natural sweetness without releasing moisture that would make the crust soggy.

Bánh xèo is served with fresh herbs and cucumber, wrapped in rice paper, and dipped in sweet fish sauce. Each pancake filled with shrimp and pork costs 8,000 VND, while a plain pancake without filling costs 4,000 VND.

According to Thom, the restaurant serves around 150 customers each day, with the number doubling on weekends. In addition to dine-in service, the restaurant also accepts takeaway orders, mainly from regular customers who place their orders by phone.
To preserve the crispiness and flavor of the pancakes, the restaurant does not prepare them in advance but only begins cooking when customers place their orders. Diners are advised to contact the restaurant and order ahead to reduce waiting times, especially on weekends.

The restaurant’s customers include local residents and people originally from Quang Ngai who come to enjoy the familiar flavors of their hometown. Recently, videos introducing the restaurant have been shared on social media, attracting more customers from distant areas, some of whom travel more than 20 km to eat there.
Thuy Chau (right), from Binh Trung Ward, says she learned about the restaurant through social media and invited a friend to try it. Chau comments that the pancakes have a pleasant rice aroma and a dry but not hard texture, with a crispy crust while the rest of the pancake remains soft and moist.
“The restaurant has a nostalgic atmosphere, and the prices are affordable,” Chau says.

Besides bánh xèo, the restaurant also serves several dishes typical of Quang Ngai cuisine, such as bánh bèo (steamed rice cakes), bánh đập (crispy rice crackers served with soft rice sheets), ram bắp (corn spring rolls), and bún mắm nêm (rice vermicelli with fermented fish sauce). Prices range from 10,000 to 40,000 VND per serving.

The restaurant is open from 3 p.m. to 8 p.m., Monday through Friday. On weekends, it starts serving customers at 7 a.m. First-time visitors are advised to check directions in advance or call the restaurant for guidance.
On Google, the restaurant has a rating of 4.9 out of 5 stars. Most reviews praise the quality of the food and its affordable prices. The main drawbacks are long waiting times during peak hours and the fact that the owner sometimes struggles to keep track of the order in which customers arrive and serve them accordingly.
