Looking at ragworms wriggling around, with their soft, squishy bodies and countless tiny legs along both sides, many people cannot help but shudder. Yet these rather frightening-looking creatures are the main ingredient in several specialty dishes, particularly famous in Hai Phong, Hai Duong (now part of Hai Phong), and several other provinces in northern Vietnam’s Red River Delta.
Ragworms are marine bristle worms that live mainly in brackish water, in muddy areas along rivers and estuaries. They belong to the group of segmented worms, with bodies divided into numerous segments, each bearing small appendages that help them move. Ragworms are usually pink, red, green, or brown and range from a few centimeters to more than 10 centimeters in length, depending on the individual and its stage of development.

Interestingly, ragworms do not appear in large numbers on the water’s surface throughout the year. Most of the time, they remain hidden in the mud. During the breeding season, usually between the ninth and eleventh lunar months in northern Vietnam, mature ragworms emerge in large numbers and swim with the currents.
This phenomenon depends on several factors, including tides, temperature, and environmental conditions. That is why local people have a traditional saying, “The twentieth of the ninth month, the fifth of the tenth,” referring to the time when ragworms commonly appear.
Despite their rather unappealing appearance, ragworms are considered one of northern Vietnam’s most distinctive delicacies, thanks to their rich, creamy texture, naturally sweet taste, and characteristic aroma. Among the dishes made from ragworms, the most famous is undoubtedly fried ragworm patties.

To prepare this dish, people usually clean the ragworms with warm water to remove mud, dirt, and the fine bristles on their bodies, then mix them with eggs, minced pork, dill, spring onions, and seasonings.
One particularly important ingredient in many traditional recipes is finely sliced tangerine peel, which adds a distinctive fragrance and helps balance the richness of the dish. The mixture is divided into small portions and fried in hot oil until both sides turn golden brown. Well-prepared ragworm patties have a slightly crispy, golden exterior, while the inside remains soft, rich, and wonderfully aromatic.
Besides fried ragworm patties, these worms are also used to prepare many other delicious dishes, such as ragworm spring rolls, ragworms braised in clay pots, salt-roasted ragworms, and fermented ragworm sauce.

In terms of nutritional values, ragworms provide protein, fat, and various minerals, including calcium, iron, zinc, and phosphorus, helping supply the body with essential nutrients.
However, like many other foods of animal origin, ragworms should be purchased from reliable sources, properly cleaned, and thoroughly cooked. Eating raw or undercooked ragworms may pose food safety risks, and some people may also experience allergic reactions.
